Wined and Dined: Soup’s On


Soup–Put it in a cup, a bowl, hell even a vase works for ingesting huge amounts of steaming sometimes veggie-filled, sometimes noodle-filled goodness.

The only vessel I wouldn’t recommend for soup is a wine glass since spoons don’t fit well inside them, and glass-filled soup is never good soup.

A bowl filled with soup and a glass filled with wine, however, is a great combination. Though surprisingly, the two are rarely seen together.  Unfortunately, soup tends to get the shady end of the vine when it comes to wine pairing since its flavors not only vary widely, but varying thicknesses and textures provide an added level of intimidation.

It’s the seeming lack of insta-dominance is what makes soup and wine pairing seem difficult or unnatural.

The trick is, you’ve got to tell the soup to take charge. Despite what Campbell’s condensed Chicken and Stars might project, soup is a multidimensional guy, and complements a lot of wines.

Once you’ve beaten soup into accepting mealtime dominance, it can be looked at like any other food that you’d want to eat with wine.  Think about the major elements of the soup’s base and ingredients (cream-based? meat-heavy?) and pick a wine that would go with those things in any other dish.

For example, Montepulciano d’Abruzzo is a bargain red Italian wine that’s a natural pair with tomato-laden pastas and pizzas.  As a result, it’s also great with a spicy, tomato-based vegetable soup (like the one I made this week based on this recipe).

Full to the brim with veggies of all sorts, and a heaping teaspoon of cayenne pepper the soup was the perfect post-frigid workout warm-up. Alongside it, I sipped La Fiera 2011 Montepulciano D’Abruzzo–a dark, plummy wine with a delicious red fruit aromas, and hint of spice that was as lovely and as warming as the soup.
